 Scientific Name: Hypsizygus tessellatus

 Appearance: Small, clustered mushrooms with cream or brown caps and thin, long stems.

​

 Flavor Profile: Mildly nutty and slightly crunchy when cooked; retains its shape well.

 Growth Conditions:

• Substrate: Hardwood sawdust blocks or Coco Coir.

• Temperature:

• Colonization: 68–75°F

• Fruiting: 50–60°F (prefers cooler fruiting conditions).

• Humidity: 85–90%.

• Fresh Air Exchange (FAE): Low; thrives in higher CO2 environments.
